Recently Jenna from Just Cook Already asked me to become a contributer! I just love this blog. There are oodles of fabulous recipes! My first recipe I shared was my husband's and my version of our favorite appetizer, Tod Mun or Shrimp and Corn Fritters. It is really easy to make and super delicious to eat:)
Ingredients:
1 1/4 c. plain flour
1 tsp. baking powder
1 tsp. ground coriander
1/2 tsp. ground cumin
5 oz. corn kernels
5 oz. creamed corn
1/4 lb. bay shrimp
1/2 c. milk
2 eggs
2 tbsp. chopped fresh chives
salt and pepper to taste
1/3 c. olive oil
Sweet Thai Sauce:
2 tbsp. brown vinegar
3 tsp. brown sugar
3 tsp. chili sauce
1 tbsp. chopped fresh chives
1 tbsp. soy sauce
1/4 tsp. cayenne pepper (optional)
Directions:
1. Sift flour, baking powder, coriander and cumin in a large bowl, making a well in the center. Add both types of corn, shrimp, milk, eggs, chives, salt and pepper into the well. Stir by hand until combined.
2. Heat oil in a large pan. Lower a heaping tablespoonful of batter into the oil. Cook over med-high heat, approx. 2 minutes per side. Remove to paper towels. Serve with dipping sauce.
To make dipping sauce:
Heat vinegar, brown sugar, chili sauce, chives, soy sauce and cayenne pepper (optional) in a small sauce pan until sugar is dissolved.

ReplyDeleteSounds so yummy...I miss all purpose flour...:( I was diagnosed with Celiac Disease a few months ago...I have to eat gluten free forever...I even had to throw my old toaster away...I can't even have a crumb...:( GF flour is not the same...lol Oh well, I guess I will look better in my jeans...
