It's Almost Fall, Time for Soup!

Being vegetarians, cooking on a budget, and eating healthily can get a bit tricky. We love this veggie soup because it easily encompasses all these things. We make it every few weeks and it makes for a lot of meals. It's tasty and very comforting. Try it, you'll like it :)

Vegetable Soup:

8 c. water or stock
2 pkgs bean soup mix of choice (we use Streit's)
3-5 cloves of garlic minced
2 medium yellow onions diced
1 bunch celery diced
2-4 cups potatoes diced (we use new red potatoes)
2 cups corn
any other vegetables you may like
spices to taste (we use tumeric, basil, oregano, bay leaves, black pepper and salt)
grated Parmesan 

This is really simple. Depending on your vegetable choices, you basically just slow cook all the ingredients for about 2 hours or until the veggies are tender! Make sure you use a big pot, or this would be great in a crock pot. For our purposes we always sweat the onions and garlic prior to adding the other ingredients just to infuse more flavor. We top with a pinch (or handful!) when ready to serve.
